Zero Ice cream, Soup, and Butterfly Card
I found Arctic Zero ice cream while I was out shopping yesterday. Only 37 calories per 1/2 cup serving. Works out to be "0" WW points per serving. WOW!!! I have to say it tastes pretty good. However....don't think I'll be buying it again. Although it was good it cost 4.99 for the pint.
I made Broccoli and Cheese soup yesterday afternoon. I have been meaning to make this, but I discovered the recipe during the middle of our "heat wave" and wasn't craving soup. Here is the recipe.
Broccoli and Cheese Soup
6 servings (serving size: 1 1/3 cups)
1 cup chopped onion
2 garlic cloves, minced
3 cups fat-free, less-sodium chicken broth
1 (16-ounce) package broccoli florets
2 1/2 cups 2% reduced-fat milk
1/3 cup all-purpose flour
1/4 teaspoon black pepper
8 ounces light processed cheese, cubed (such as Velveeta Light)
Heat a large nonstick saucepan coated with cooking spray over medium-high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium-high heat. Reduce heat to medium; cook 10 minutes.
Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts.
Place one-third of the soup in a blender or food processor, and process until smooth. Return pureed soup mixture to pan.

Craving color while I was making this card. Hello Doily stamped with Daffodil Delight ink, butterfly die cut using Regal Rose cardstock. Center of the flower Early Espresso cardstock with large scallop circle punch. Well Worn designer paper also used with small scallop circle punch. Stamp set, Word Play.
Suppose to rain most of the weekend, so I'm not going to get to go biking. Guess I'll be hitting the treadmill this weekend.
